Q: Sir, Do you have a best guess on how long a 8-10 lbs brisket at 200-225 will take to get done. I was thinking about 1 hour per pound. Is this close. thank you! A: You can usually figure about 1.5 hours per pound at 225 degrees for brisket, pork shoulder and other larger pieces of meat. Several things can affect this time such as actual meat thickness, wind, temperature and how
often you open the door of the smoker. I smoked a 9 pound brisket a few weeks back on a cold, windy night and it took 20 hours to complete. If you have a fairly calm day with mild temperatures and you can maintain at least 225 degrees and only open the door when you absolutely have to mop or check the temp on the brisket then you should be able to guesstimate about 13.5 to 15 hours. How to Smoke a BrisketSmoking brisket isn’t hard, it just takes time, and lots of it! Follow the steps below to get the best smoked brisket of your life:
How Long to Smoke a BrisketI wish I could tell you an exact time that smoking will take, but alas, that’s kind of the beauty of BBQ. It’s done when it is done. For the initial smoke phase, I plan about 8 hours at 225 degrees F for my 12-13 pound briskets to reach 165 degrees F. However, your brisket will enter a phase in between 145 degrees F and 165 degrees F where the liquid evaporating from the surface of the brisket will cool it while your grill is trying to cook it. This is called the stall, and the time frame is different during this phase for every brisket I’ve ever cooked. This is where a good internal thermometer comes in. The second phase (once it’s wrapped in butcher paper), can take anywhere from 5-8 hours. I usually plan an extra 2 hours for each of my brisket cooks because if it is done early, I can always set it in a cooler and allow it to rest for a while. If it is done late my husband gets hangry. Bottom line: plan for anywhere from 12-18 hours to fully cook your brisket (this includes the initial smoke to 165 degrees and the wrapped smoke to get your meat up to 202 degrees Fahrenheit). Place brisket on the grill grate fat side down, and cook for approximately 6 hours or until the internal temperature reaches 160 degrees Fahrenheit.
How long does it take to smoke an 8 pound brisket at 250 degrees?Generally plan 60 minutes for every pound of smoked brisket, including the rest (or hold temperature), when cooking at 250 degrees Fahrenheit.
Is it better to smoke brisket at 225 or 250?Generally speaking, smoking brisket at a lower temperature (around 225 degrees) will result in a more tender, juicy finished product. What is this? However, cooking at a higher temperature (250 degrees) will create a brisket that is more evenly cooked and easier to slice.
How do you smoke an 8 pound brisket?Place the brisket on the smoker with the point end facing your main heat source. This is a thicker part of the brisket and it can handle the additional heat. Close the lid and smoke until and internal thermometer reads 165 degrees F (usually takes around 8 hours).
