Just plan ahead a little—the steak needs at least an hour to marinate—and the rest comes together unbelievably fast.

Carne asada means “grilled beef”, but more specifically in this context it usually refers to steak—often skirt steak (which you can use here) or a similarly lean, inexpensive cut of beef—that’s marinated and then grilled. Carne asada is all about the pure, beefy flavor of those lean cuts and the absolute heaven that is a classic carne asada marinade. Method

  1. Make the carne asada. Let it rest before cutting it (against the grain) into bite-size pieces.
  2. Prepare the toppings. While the steak is cooking, chop the onions, roughly chop the cilantro, prepare the guacamole and warm or toast the tortillas.
  3. Assemble the tacos. Fill the warm tortillas with chopped steak, raw onion, cilantro and guacamole.

Preheat your cast iron pan over medium-high heat for about 5 minutes, or until very hot. Cook the steak, about 3-5 minutes per side, until it reaches desired doneness. Let the steak rest for 5 to 10 minutes before slicing against the grain.
