Description

Anchovies contain high amounts of proteins, vitamins A, B, D and niacin which can improve your skin health, immune system, and are vital for a healthy lifestyle. They have a high meat-to-fat ratio and are very rich in Omega-3 fatty acids which are essential for the normal functioning of the heart, blood vessels and the brain.

Used for thousands of years in many parts of the world, anchovies offer a great variety of options when it comes to recipes, some popular ones include butter-seared basic anchovies with white wine vinegar sauce and garlic toast, anchovy tartar and the famous Caesar Salad with croutons. They also make for a great pizza topping. Anchovies are usually the flavour you cannot “put” your taste buds on. It is best paired with extra crisp, dry white wines such as Assyrtiko or Albarino.

They are being eaten whole or sliced in small parts and incorporated into salad dishes, pasta or even pizzas. Frozen anchovies are deemed safe for 180 days of blast frozen processing. For months, you can now keep your precious anchovies fresh. Frozen anchovies are normally packed in aluminium foil or freezer sheets just before freezing. Where can I find fresh anchovies?

The flesh is very soft and bruises easily. Use your nose to help judge freshness. When anchovies start to spoil, they smell extremely bad. As with any fresh fish, also look for bright eyes.

What are fresh anchovies called?

Anchovies, like olives, bread and wine, are quintessential Spanish food. In Spain, anchovies are eaten fresh and cured. (The anchovies we know from cans and jars are a variety of the cured). The fresh (uncured) anchovies are known as boquerones, and the cured anchovies are called anchoas.

Are fresh anchovies healthy?

Anchovies are small, flavorful fish with a nutrient-rich profile. They're particularly high in omega-3 fatty acids, protein, and vitamins and minerals, which are responsible for anchovies' benefits for weight loss, cancer, and heart and brain health.

Why is it so hard to find anchovies?

There is less oxygen and food available for anchovies in warmer waters, so the fish travel to deeper, colder waters that fishermen can't reach. Fish that have adapted to low oxygen levels, such as gobies, are more common in warmer waters.
