It's Memorial Day weekend—the kick-off to summer—which means hot days that call for cold drinks. For me, that means plenty of icy coffee beverages and Starbucks Frappuccinos.

I love just about every single Starbucks beverage, hot and cold, but since my family and I decided we were going to cut back on our Starbucks bills, it was time to make more copycat beverages at home. And this Copycat Starbucks Caramel Ribbon Crunch Frappuccino is my new favorite.

Caramel mixed with espresso or coffee (even decaf works) milk, dry pudding mix or Xanthan gum and ice is all combined in a blender. Then, whipped cream tops this off with another drizzle of caramel along with the crunch factor, the toffee bits.

  • 1 Tbsp dry instant vanilla or butterscotch pudding, regular or sugar free
  • 2 Tbsp whipped cream, I used aerosol
  • 2 Tbsp Health Toffee Bits, with the chocolate chips

How to make a Caramel Ribbon Crunch Frappuccino

  1. Pour ice, coffee and milk into blender, whirl just until the ice breaks up.
  2. Add in caramel sauce and dry pudding mix. Whirl again until creamy. If needed add more coffee or milk and you may have to stop and scrape down sides.
  3. When thick and creamy, add in 2 tablespoon of the toffee bits and whirl again to break the bits up a little.
  4. Pour into a tall glass and top with whipped cream a drizzle of caramel and the last tablespoon of toffee bits.

Both my daughter and I just had one and we both finished it to the last sip. We really enjoyed the icy caramel coffee frappe with a nice crunch on top. I recently posted another caramel frappe, but this one is different—just by a few ingredients.
