Garlic, lemon, dill, and oregano add tons of flavor to a simple chicken and potatoes dinner, and, thanks to the air fryer, everything's crispy-crunchy. Comments Credit: Olivia McCool If you’ve ever been to a Greek restaurant and ordered potatoes with lemon and oregano, you know exactly the deliciousness we’re going for here. Garlic, lemon, dill, and oregano add tons of flavor to a simple chicken and potatoes dinner, and, thanks to the air fryer, everything’s crispy-crunchy. You’ll start by marinating the chicken in olive oil, salt, garlic, and lemon zest. The salt works double duty here, creating extra-juicy meat while also pulling away moisture from the skin. Soaking the potatoes in water ensures they get extra crispy, too — the water washes away some of the starch, which can sabotage the crisp. When you’re ready to cook, arrange the chicken in the air fryer basket skin-side down. Air fryers vary in size (as do chicken thighs), but on average four thighs should fit in an even layer. (If they’re touching a bit, it’s fine — they’ll shrink as they cook). Cook, flipping once, until the skin is a gorgeous golden-brown and shatteringly crisp, then swap in the potatoes and let them do their thing. They’ll need a good shake every few minutes to make sure all sides get equal exposure to the hot circulating air. While they cook, you can prep your garnishes of dill and lemon. I encourage you to get a little fancy and arrange everything on a platter. You’re going to want to show this one off! Garlic, lemon, dill, and oregano add tons of flavor to a simple chicken and potatoes dinner, and, thanks to the air fryer, everything's crispy-crunchy. Ingredients

🔪 InstructionsCheck out how to cook chicken and potatoes in air fryer with these simple step-by-step instructions: Combine the seasonings in a small bowl. Set aside. Wash and dice your potatoes into 1 inch sized cubes. Place into a large mixing bowl. Add in 2 tablespoons of the seasoning blend, 2 tablespoons of olive oil, and the minced garlic. Toss together until well coated. Place the potatoes into the air fryer basket. You will leave seasoning and garlic behind in the bowl, this is okay! Add the chicken thighs to the same bowl that the potatoes were in and top with the remaining seasonings and olive oil. Mix well to coat all sides. Place the chicken thighs, skin side up, on top of the potatoes. Air fry at 360 degrees F for 25 minutes. Flip the chicken over so that it is skin side down at the 15 minute mark. During this time, shake the potatoes around a little bit as well. Serve warm and enjoy. 🧾 SubstitutionsIf desired you can make this recipe using boneless chicken thighs instead. To do air fryer boneless chicken thighs and potatoes, you may need to remove the chicken thighs about 2-4 minutes sooner than the potatoes as they will cook more quickly than those with bone. 📖 VariationsDifferent potatoes make all of the difference. You can use potatoes medley/new potatoes (like I did) or you can use fingerling potatoes, red potatoes, yellow potatoes, or russet potatoes. Using sweet potatoes is also okay and can give you a healthier dinner dish to serve up. 🍴 Recipe TipsMaking chicken and potatoes in the air fryer is super easy but you should make sure to check on the meal as it's cooking, at the halfway mark and again as it's close to finishing. This will help you to see that the potatoes are becoming crispy and golden on the outside while the chicken is cooking properly as well. Your chicken is safe to consume when it reaches an internal temperature of 165 degrees F. 🍳ReheatingYou can reheat any leftovers in your air fryer at 350 degrees F for about 5 minutes. Potatoes by themselves may be finished in about 3-4 minutes and depending on the size of the chicken thighs they could take up to 8 minutes to fully warm through. 🥗 Side DishesBecause the main point of this recipe is to keep things simple, it only makes sense that any added side dishes are simple too! I like to serve up steamed veggies and a simple side salad but other great ideas include Baking Powder Biscuits, Roasted Brussel Sprouts and Carrots, or Creamy Orange Fluff Salad. 💭 FAQsHow long are leftovers good for? You can keep your leftovers from this dish stored in an airtight container in the fridge for 3-5 days. Reheat again before serving. Can you put raw chicken in the air fryer? Absolutely! You can even cook frozen meats (but it will take longer). Cooking raw meat in the air fryer is a great way to reduce fats and oils while preserving the nutritional benefits and cutting back on the actual cooking time too. Can you cook meat and potatoes at the same time in an air fryer? Yes. Cooking meat and potatoes at the same time is fine assuming you use cuts of meat that take about the same length of time as the potatoes and that the potatoes are all the same size. Some recipes may have you start the potatoes first and then add the meat a few minutes later if the meat is faster cooking than the potatoes. More great air fryer recipes to check out soon
